Still 630 SS Sorghum Whiskey is made from 100% Sorghum and was the whiskey that impressed me the most when I recently toured the St.Louis distillery. A distillery, by the way, that I was thoroughly impressed with after talking to the owner David Weglarz. Listening to his passion and his thought process behind making his whiskey, which he distills and ages in an old Hardee’s, was an awesome experience.

Inside of that ex-Fast Food joint David experiments with barrels of all sizes to create his whiskeys. He meticulously works his still and manages his racks to get the most out of what he has and it shows in the final product. A product we got to do a tasting of at the end of the short tour. Everything we tasted was better than I would have imagined and shows tremendous promise, but this Still 630 SS Sorghum Whiskey stood out as a unique product that I wanted to get an even better understanding of back home in Los Angeles.

EYE
Nutty brown

NOSE
Cinnamon and sugar dusted fried tortillas, vanilla ice cream, brown sugar, baking spices, dried cherries and light notes of french toast and strawberry honey butter.

PALATE
Cinnamon and sugar dusted fried tortillas, vanilla ice cream, hazelnuts, brown sugar, baking spices, dried cherries, strawberry honey butter and an overall light essence of french toast. The youth shows up towards the end with a slightly spirity pop and some of that “craft whiskey sawdust” character and a touch of cocoa.

FINISH
Medium fade of sweet bran muffins, maple pancakes and cinnamon honey butter.

BALANCE, BODY & FEEL
Decent balance with a a medium body and a thick syrupy feel.

OVERALL
Still 630 SS Sorghum Whiskey is like a crazy rum and reminds me of a dessert from my youth. When I was a kid my parents would take us to Los Lobos, a Mexican Restaurant in Utah, and their signature dessert was fried flour tortillas they’d sprinkle with cinnamon and sugar and put a scoop of vanilla ice cream on. They were wonderful and that is what the core of the Still 630 SS Sorghum Whiskey reminds me of.

Under that core is a nice alignment of dark fruit and other dark sweet flavors that moves the whiskey into more of a rum direction but without the sometimes cloying nature rum can have. It’s unique, interesting, bold and I can see why it’s won so many awards in the craft spirits category. It’s not everyday you come across something like this and as they continue to age and work on it I see a lot of promise here. Yet another small distillery to keep an eye on.

  1. Mad props to David and his awesome whiskey and other distilled spirits. I’ve been a big fan of his for a few years now. His maple sunset rye and this product are my two favorites. Cheers!
